Great to get a tip from the food expert (as it's obvious from your site), thanks!

For us, eating out in Singapore was good all around, but in Vietnam we liked mostly the bottom part of the country, roughly southwards from Hue.

the 'big transparent garlic' is also known as...

longan

The Longan fruit tastes a bit like lychee but is crispier and sweeter :-)
